Because Hsinchu always benefits strong winds, this area's unique climate and environment is very suitable for the manufacture of rice noodles. As a result, rice noodles gradually developed into a local specialty. The main producing area of the Hsinchu rice noodles is the most well-known Nanshih area. In the 1960s, this region abounds in rice, thus became a center of production of rice noodles. As a result, this region is always referred as Rice Noodles Liao.

Do you see this gorgeous machine? What this machine was doing is to mill flour into block and then the powdery rice will be shaped into noodle. The noodles are steamed, cut, spilt and then dried. At last, it becomes what we saw in the supermarkets. Remember what we about last picture? This machine was designed by Mr. Cai himself!!! Isn＊t that shocking enough?

Then, these noodles go through high temperature(115 centigrade) and high pressure(0.48 kg) for about 30 minutes. This was the moment when this procedure is done.

After that, the hot noodles were cut into clusters. Then, one process which needs most human work came into our sight. In this process, noodles need to be separated into some sort of small clusters that can fit the commercial selling. And we three all tried this process ourselves. During this process, we talked to two workers there and knew a lot about this factory and rice noodles. One of the workers told us that she had worked there for more than 20 years. And it takes nearly 10 hours to finish one day's work. We thought it was really tough work. Another worker had an assistant who can help her a lot----her 10 years old son! The little boy was very cute but some kind of shy, he helped a lot for his mother. Also, she told us that there are some foreign workers in that factory including mainland China. Before seen this scene by myself, I can hardly imagine someone spend a lifelong time on some repetitive work. Also, we realized that life is not always an easy job.

Mrs.Cai was cooking rice noodles for us. Tips: never use a shovel during cooking rice noodles, use chopsticks instead.

After nearly 2 hours tour, most of us are too hungry to wait this delicious noodles! Thanks to Professor Lin who provides us such a good opportunity to observe Hsinchu in another perspective. This experience was really wonderful and valuable. What we have learnt was not only the Hsinchu rice noodles; we could also see people who are living in this city in a new way. At the end of this journey, Mr. Cai shared his goal in the near future with us. We can tell he is a really ambitious man and we have belief in him. He deserves the best!
